“ This is the perfect Texas BBQ. Ribs are fall off the bone, smoky, great flavor. Brisket is nice and juicy. The chopped brisket had the perfect mix of tender pieces, fatty bits, and crunchy smoked bites. The pulled pork was also great and the BBQ sauce was perfect on everything. The cowboy beans were so good, cooked well, great spice. Really it was even better than I was prepared for. They came up to delivered to us at mt Princeton Hot Springs. ”

“ This is the ONLY place to go if you're looking for delicious, fall-off-the-bone BBQ. They make their own sauce (Mild & Spicy) which you can also purchase jars of. The pit master is from Texas, the son of a BBQ restaurant owner, and is incredibly friendly. The staff is fun and makes you feel right at home. We got a two plate combo (beef ribs, sliced brisket, coleslaw, and cowboy beans) with another 1/2lb of sliced brisket. I can't say enough good about the food. It's addicting, no joke. Hot, juicy, and flavourful. You can taste the love and passion they put into their entire menu. I promise you won't find smoked BBQ anywhere better in the central high rockies than High Country! They're truly authentic and absolutely unreal. ”

Our sandwiches were packed with meat, way more than any other place I've been to in Colorado. “ If you need a big dinner or passing through town, this is a must stop! Stopped in after a long day in the mountains, and was ready to eat. Got there later in the day, so a few items were sold out - no big deal! I got the one meat plate (brisket) and a side of coleslaw and potato salad. I lived in Texas for over 8 years and this is the best BBQ I’ve had outside of Texas state lines. The brisket was juicy melt in your mouth good (both BBQ sauces were amazing too - I mixed them together) the sides of coleslaw and potato salad were so good and reminded me of some great southern cooking! ”
